Turkey Salad

Great meal for the Summer!
  
Serves 4

Ingredients:

1 Turkey thigh, boiled in water (save 1/2 cup broth)
2 Tbsp Mayonnaise
1/4 cup onion, chopped
Green Salad (Romaine lettuce, chopped tomato, chopped cucumber)
1/4 cup Balsamic vinegar
1/8 cup Red Wine vinegar
1/8 cup White Wine
1 tsp Minced garlic
1 1/2 tsp Garlic salt
1/4 cup Olive Oil
1/8 tsp Italian Seasoning
Home-made Croutons (make extra for a treat later)

Croutons: It's best to use home-made bread, but store bought bread is okay too. Cut the bread into 1-inch cubes. Spread evenly on cookie sheet and coat with garlic salt and cajun seasoning. Toast to golden brown in 350° oven. (Remember to make a double batch to save some for later)

Directions:

Put your green salad in a large bowl and pour the broth over it. Cut up cooked turkey into chunks. Add the chopped onion and coat with mayonnaise. Set aside. Mix the following in a small container: balsamic vinegar, red wine vinegar, white wine, minced garlic, garlic salt, oil and Italian seasonings. Mix well and pour over salad. Then mix coated turkey and onion into the salad. Top with croutons. Serve.Enjoy.

** Extra treat! **

Save the remaining sauce in the bottom of the salad bowl. Put this sauce in small bowl and serve with warmed croutons. Dip the croutons in the sauce. Mmmmm!This treat is especially delicious while soaking in a warm, lovely-scented bubble bath!
