Tilapia Fish with Lime

Quick & easy, but oh so good!

Serves 4

Ingredients:

4-6 Tilapia fish filets
1 bag Spinach leaves, washed well
5-6 Limes, juiced. Keep 1/2 of 1 lime to cut up for garnish
1 Tomato, cut into chunks
1 1/2 cups Grapes, halved
2 cloves Garlic, crushed
1 cup White Wine
Oil
Chives
Red Pepper flakes
White rice (optional)

Directions:

Mix the spinach leaves with garlic and oil and place in a 13 x 9 baking dish. Lay the Tilapia filets on top of the spinach. Evenly distribute the tomatoes and grapes over the filets. Sprinkle with some oil. Add white wine to the lime juice and pour over the top. Sprinkle with crushed red pepper and chives.

Bake at 350 for 30-45 minutes, or until Tilapia is done. Garnish with remaining lime. Serve with white rice if desired.
