Pork with Fruit and Peppers

This recipe is quick to prepare and a great light summer meal!

Serves 4

Ingredients:

4 boneless pork chops
1 Tbsp olive oil
1 Tbsp butter or margarine
2 Italian peppers, slivered
1/2 red bell pepper, slivered
1/2 onion, chopped
lemon pepper seasoning
white wine
dash of rosemary
1 cup grapes, halved
1 tomato, cut into chunks
fresh sage
1/4 cup cider vinegar
1/2 cup raisins
juice of 1 lime


Directions:

Put olive oil and butter in frying pan.  Generously sprinkle both sides of pork chops with lemon pepper seasoning and fry in pan.  When turned, add sliced sliced peppers and onion.  When pork is almost done, take veggies out and de-glaze the pan with white wine.  Add rosemary and grapes.  Put veggies back in the pan and add chunked tomato, sage, cider vinegar.  Top with lime juice and let simmer for 5-10 minutes or until heated through.
