Chicken Gorgonzola

serves 4-6

I don't think I had ever had gorgonzola cheese before.
Wow!  What have I been missing?  LOL

Ingredients:

3 lbs boneless chicken breasts
1 stalk celery, sliced thin, julienne style
1/2 lb. gorgonzola cheese, crumbled
1/2 cup butter or margarine
1/8 cup honey mustard
1/2 tsp balsamic vinegar
1/2 cup white wine
1/3 cup lemon juice
1-1/2 tsp horseradish
1 Tbsp Basil
1 tsp Cumin
1 Tbsp Chili Powder
1 Tbsp Minced Onion
2 tsp lemon pepper

Directions:

Blend butter, minced onion and lemon pepper.  Melt in microwave.  Add honey mustard, lemon juice, white wine and balsamic vinegar.  Lightly dredge chicken through Cumin and Chili Powder.  Melt 1 Tbsp of butter and horseradish in skillet.  Brown chick on both sides.  Pour melted butter mixture into pan.  Add celery.  Simmer, covered, for about 20 minutes.  Sprinkle gorgonzola cheese on top of chicken, and then top with basil.  Simmer for 5 to 10 minutes, or until cheese is melted.
