Caribbean Chicken

Sweet and fruity with just the right zing!

Serves 2

My husband makes these recipes up on the spur of the moment.  : )  
He's my own personal "Emeril"  *wink*   You've GOT to try this!

Ingredients:

1 pkg Chicken tenderloins
1 Red Delicious Apple, sliced into very thin wedges
1 Italian pepper, slivered
Garlic, minced
1/3 cup Worcestershire sauce
2 Tbsp Orange Marmalade
3 Tbsp butter or margarine
Juice of 1 lemon
Lawry's
® 30 Minute Marinade - Caribbean Jerk
2 tsp Sweet Basil
Cayenne Pepper

Directions:

30 minutes to 1 hour before cooking, place chicken in deep dish and cover with about 1/2 bottle of marinade.  Place in refrigerator.  When ready to start cooking apples and peppers, place chicken on baking sheet and bake at 375º until done.  Save remainder of marinade.

Put 1/2 of butter in frying pan.  Cook garlic and pepper.  Add basil and cook till peppers are tender.  Remove from pan.  Add more butter and apple wedges.  Sprinkle lemon juice over apples to prevent browning.  Simmer until apples are softened.  Add Worcestershire sauce and marmalade.  Stir.  Return peppers to the pan and simmer briefly.  Just before serving, sprinkle with just a touch of cayenne pepper.

Serve chicken tenderloins over apple and pepper mixture.  Warm the remainder of the marinade for extra sauce.  Add a tossed green salad on the side.
